If you are gluten-free, this is a great way to enjoy the flavors of pot pie without having to figure out how to make a gluten-free crust.

Not only is this creamy chicken pot pie filling incredibly easy to prepare, but it also allows for flexibility in portioning and storing, making it an ideal choice for those who prioritize convenience and healthy eating.

Crustless Chicken Pot Pie Ingredients

Ready to make this healthy one-pot dinner? Here are the simple ingredients you need to make this cozy meal. You can find the measurements from the recipe card at the bottom.

  • boneless skinless chicken breasts or chicken tenders, cubed
  • chicken stock
  • diced carrots
  • diced celery
  • corn
  • onion, diced
  • sea salt
  • garlic powder or granulated garlic
  • onion powder
  • ground black pepper
  • poultry seasoning (see below in notes for substitution suggestion)
  • dried thyme
  • coconut cream, full-fat coconut milk, plant-based milk, OR heavy cream (if you can tolerate dairy)
  • green peas

Note on poultry seasoning: If you don’t have poultry seasoning, you can simply add a bit more onion powder and garlic powder and the following: 1/4 tsp sage, 1/4 tsp rosemary, 1/4 tsp marjoram, and 1/8 tsp paprika. If you don’t have marjoram on-hand, add 1/4 tsp more thyme instead.

How to Make Crustless Chicken Pot Pie Recipe

  1. Combine chicken, broth, carrots, celery, corn, onion, salt, garlic powder, onion powder, black pepper, poultry seasoning, and thyme in a multi-functional pressure cooker (such as Instant Pot).
  2. Close and lock the lid. Make sure it’s on “sealing” and not “venting”. Select high/manual pressure and set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
  3. Release pressure using the natural-release method according to manufacturer’s instructions, about 10 minutes.
  4. Release remaining pressure carefully using the quick-release method. Unlock and remove the lid.
  5. Stir in dairy-free cream/milk of choice and peas. Select the Sauté function. Cook until thickened, 2 to 3 minutes.

If you are short on time, you can use rotisserie chicken or leftover roasted chicken instead of diced chicken breast. Simply follow the instructions, leaving out the chicken. After cook time has ended and the pressure has been released, add the shredded rotisserie chicken to the pot along with the peas and cream (or cream substitute).
