My daughter jokes that when she was growing up all leftovers were either turned into a casserole or fried rice. I grew up in a family where casseroles were a plenty, and my husband is Asian, so there ya go. Now that we are gluten-free, I have had to change the way I make casseroles – and I needed some new ideas!

We compiled a huge list of gluten free casserole recipes to help give you some inspiration in the kitchen. Before we get to that, let me get you excited about making casseroles.

Making a gluten free casserole isn’t much of a challenge because you can still use rice and gluten-free pasta. But when you eliminate the use of grains, you have to get more creative. What to Use in Gluten-free & Grain-free Casseroles

  • Gluten-free Pasta Substitutes: You can get some great ideas for swapping out gluten-filled pasta in AIP Pasta post. (AIP stands for autoimmune protocol).
  • Quinoa: Contrary to what many believe or assume, quinoa is NOT a grain!
  • Potatoes: (as long as you can have nightshades)
  • Mashed Malanga: Malanga makes a GREAT white potato substitute. Think shepherd’s pie!
  • Tater Tots: Tater tot casserole is a family favorite! It can be a tad difficult to find store-bought tater tots that are not filled with a lot of nasty ingredients and bad-for-you oils, so be sure to check the labels.
  • Beans and Legumes: Incorporating beans or legumes, like lentils into your casseroles is a great way to add extra protein.
  • Buckwheat Groats: I enjoy using buckwheat groats as a substitute for barley in soup. It also makes a great addition to various types of casseroles and dishes.
  • Vegetables: You can add most any type of vegetable to a casserole.
  • Riced Cauliflower: Using riced caulflower in place of regular rice is a great grain-free substitute that’s packed with all the vitamins you get from cauliflower.
  • Cheese: Of course, what casserole isn’t better with cheese? Yes, please!
  • Gluten-free Breadcrumbs: You can make your own bread crumbs using a grain free bread recipe or your favorite store-bought gluten-free bread. I have yet to find one I love, however the Base Culture breads are pretty decent.
  • Cream Sauce: When making a gluten-free cream sauce, I like to make my rue using cassava flour and grass-fed butter. To keep it dairy-free I use a plant-based milk, like cashew milk (cashew milk makes the CREAMIEST sauce, in my opinion).
