Casseroles
My daughter jokes that when she was growing up all leftovers were either turned into a casserole or fried rice. I grew up in a family where casseroles were a plenty, and my husband is Asian, so there ya go. Now that we are gluten-free, I have had to change the way I make casseroles – and I needed some new ideas!
We compiled a huge list of gluten free casserole recipes to help give you some inspiration in the kitchen. Before we get to that, let me get you excited about making casseroles.
First, What is a Casserole?
A casserole is a dish that consists of various ingredients, such as meat, vegetables, and starches, combined together in a single baking pan or dish. It is typically baked in the oven until all the flavors meld together and create a delicious and comforting meal.
The concept of casseroles can be traced back to ancient times when people cooked their meals in clay pots or pans. The idea behind making casseroles was to bring different ingredients together for easier cooking and serving. This method allowed households to make hearty dishes by combining leftover food items with fresh ingredients.
Over time, the popularity of casseroles spread across cultures and cuisines. From traditional shepherd’s pie in England to lasagna in Italy, each culture has its take on creating flavorful combinations within a casserole format.
Benefits of Making a Casserole for Dinner
- Convenience: Casseroles are a convenient option as they can be prepared in advance and then baked when you’re ready to eat. Casseroles make a great freezer meal!
- Versatility: Casseroles offer endless possibilities when it comes to ingredients, allowing you to customize them based on your preferences or dietary needs. You can incorporate different proteins, vegetables, and spices to create unique flavor combinations that suit your taste.
- Leftovers: Making a casserole means having leftovers for later meals or lunches throughout the week. You can also throw all your leftovers together to CREATE a casserole! This not only saves money but also reduces food waste by utilizing any leftover ingredients from previous meals.
- Crowd-pleaser: Whether you’re hosting guests or feeding your family members, casseroles tend to be crowd-pleasers due to their comforting flavors and hearty nature. They are perfect for potlucks or gatherings since they can easily serve larger groups of people while still being satisfying and delicious.

What to Use in Gluten-free & Grain-free Casseroles
- Gluten-free Pasta Substitutes: You can get some great ideas for swapping out gluten-filled pasta in AIP Pasta post. (AIP stands for autoimmune protocol).
- Quinoa: Contrary to what many believe or assume, quinoa is NOT a grain!
- Potatoes: (as long as you can have nightshades)
- Mashed Malanga: Malanga makes a GREAT white potato substitute. Think shepherd’s pie!
- Tater Tots: Tater tot casserole is a family favorite! It can be a tad difficult to find store-bought tater tots that are not filled with a lot of nasty ingredients and bad-for-you oils, so be sure to check the labels.
- Beans and Legumes: Incorporating beans or legumes, like lentils into your casseroles is a great way to add extra protein.
- Buckwheat Groats: I enjoy using buckwheat groats as a substitute for barley in soup. It also makes a great addition to various types of casseroles and dishes.
- Vegetables: You can add most any type of vegetable to a casserole.
- Riced Cauliflower: Using riced caulflower in place of regular rice is a great grain-free substitute that’s packed with all the vitamins you get from cauliflower.
- Cheese: Of course, what casserole isn’t better with cheese? Yes, please!
- Gluten-free Breadcrumbs: You can make your own bread crumbs using a grain free bread recipe or your favorite store-bought gluten-free bread. I have yet to find one I love, however the Base Culture breads are pretty decent.
- Cream Sauce: When making a gluten-free cream sauce, I like to make my rue using cassava flour and grass-fed butter. To keep it dairy-free I use a plant-based milk, like cashew milk (cashew milk makes the CREAMIEST sauce, in my opinion).
Grain-free Breadcrumb Substitutes
Several recipes use breadcrumbs as a topping, and if you’re on a grain-free diet, you likely know you need to substitute regular, gluten-filled breadcrumbs for ones you can eat. Here are some great alternate choices to keep your topping grain-free.
- Paleo AIP Seasoned Breading Mix
- Organic Chickpea Bread Crumbs
- Keto Bread Crumbs
- Appel Foods: Nut Crumbs, Bread Crumb Alternative
- Almond Flour Keto Breadcrumbs
