21 Dairy Free “Cheese” Recipes

One of the things I miss most about my former food life (besides tomatoes), is cheese. My favorites were parmesan, pecorino romano, provolone, mozzarella, brie, and don’t even get me started on goat cheese…oh dear.

I used to balk at friends who encouraged me to try zucchini “cheese” and other cheese alternatives. Ok, “balk” is an understatement. I would protest and say things like “what’s the point?” “I’d rather do without than eat some sad alternative made of zucchini.”

Well, I have officially had to eat my words (not that it’s the first time). Here is a round up of “cheese” recipes. I’m putting my favorite one first. It’s from The Spunky Coconut and is a staple in my home. I do make a few alterations by substituting the cauliflower with zucchini and stirring in finely chopped basil at the end. I like to dip slices of it in olive oil sprinkled with a little smoked salt.
