Have you been hunting for AIP cookies that you can make from home? These cookies are suitable for the autoimmune protocol and use grain-free, gluten-free ingredients, and of course they don’t contain any dairy. So, if you have a craving for cookies, check out these AIP cookie recipes.
AIP Cookies
With the holidays quickly approaching, I thought doing an autoimmune paleo cookie round-up would be a fun idea. Who doesn’t love a good cookie?
My favorite cookie growing up was my mom’s “Christmas Crescent Cookies” a/k/a Italian Wedding Cookies. She made the little beauties using real butter and ground walnuts (not almonds as most recipes I’ve found) and they were heavenly – not too sweet, delicate, melt-in-your mouth.
But now that I am in the AIP elimination stage, I wanted to find some great go-to cookie recipes that can be eaten on an AIP diet for everyday as well as special occasions. Scroll down for a list of the best and most tasty AIP cookies.
Autoimmune Protocol Sweets
The autoimmune protocol (AIP) shouldn’t make you feel deprived at the holidays, so indulge and enjoy yourself – but don’t overdo it! Too many sweets, even of the natural variety, can trigger an autoimmune flare. So use caution and listen to your body.
If baking cookies from scratch isn’t your thing, or you’d like the convenience of having AIP-compliant cookie dough on hand that can be baked off easily, Paleo on the Go has come up with two great flavors – Sugar Cookie and Gingerbread! AIP Baking
AIP baking is much different than “regular” baking. An AIP recipe ingredient list might consist of organic coconut flour, organic gemini tigernut flour, cassava flour, arrowroot flour, tapioca starch, and organic palm shortening.
Natural Sweeteners
Instead of using white sugar, you’ll see recipes call for natural sugars like organic maple syrup, coconut sugar, coconut nectar, raw wildflower honey, vanilla powder, carob powder, and homemade carob chips.

They are made with fairly simple ingredients: cassava flour, coconut flour, sea salt, cream of tartar, baking soda, cinnamon, granulated sweetener of choice (like sucanat), unsweetened apple sauce, palm shortening, coconut oil, coconut milk, and vanilla extract.
2. AIP Spice Cookies
If you enjoy spice cookies, check out these Paleo AIP Applesauce Spice Cookies. They call for these ingredients: tigernut flour, arrowroot powder, gelatin, salt, baking soda, cinnamon, ground ginger, coconut oil, coconut butter, and applesauce.
