Recipe Review: Banana Blueberry Muffins

Muffins, breads, cakes – do you miss them? I do! I have been strict AIP for about 15 months now and the majority of the “bread” or “baked goods” recipes that I try that are AIP elimination phase compliant are not what I am used to. More often than not, I fail…miserably.
Until the cookbook “He Won’t Know it’s Paleo.” I just made the Banana Blueberry Muffins recipe. Oh.my.goodness. This is what I remember about how a muffin should taste and feel.
Look at that muffin! It is moist, crumbly, and was SO good! I gobbled up two of them right away. I had to make a couple changes to the recipe and I was a little worried that they would get messed up – nope! I was out of AIP compliant vanilla extract, so that was eliminated and I used lime juice instead of lemon juice because that is all I had. I imagine adding lemon and vanilla would make the flavors even more profound, but as it was – it was just wonderful!
This is the second thing I have tried and loved from the He Won’t Know it’s Paleo Cookbook. The recipe is not found on the Internet, unfortunately, so you would have to buy the book. I promise I am not trying to be a tease, it is just so good I wanted to tell you about it! You can buy the cookbook here though. I would recommend saving the money and getting the kindle edition though as I find the book to not be as high in quality as some of my other favorite cookbooks.
The other recipe that I have made a handful of times that we all love (even my gluten-full, junk food eating teen) is the Banana Bread Bars. This is found in the cookbook as well as on the author’s website here. These are seriously YUM.
