Have you ever eaten a whole pound of meat during one meal? I didn’t think so. I had a problem with portion control in these bad boys – they are THAT good.
These lovely Chicken & Zucchini Poppers {AKA meatballs/sliders} are packed full of goodness. The added zucchini makes them veggie-licious and full of good stuff for your body. I have made these 3 times now. The first time I ate ALL of them. YES – the whole pound of meat. I felt like I do after our Thanksgiving meals – overly full and somewhat uncomfortable. The second time my husband, who is NOT AIP or Paleo, tasted them and laughed at how good they were. You know the little giggle that slips out when something tastes so good? He ate a few and I had to stop him from devouring them all, it was my dinner after-all.
Next time I plan to try adding shredded carrots. I bet this mixture might even be good combined with The Healing Kitchen’s Chicken & Hashbrown patties! I am going to have to try that too.
I really, really enjoy these Chicken & Zucchini Poppers with AIP “Ranch Dressing.”
*For AIP, do not add the optional cumin. Black pepper is an early re-intro, so be sure to omit that as well if you haven’t reintroduced that yet.
