This is a picture I took of dinner a week or so ago…but I forgot to take a snapshot of dinner tonight, so here ya go! I’m so sorry – but hunger makes me forgetful.
If you’re still following my progress on the autoimmune protocol, I’m taking it one day at a time. There are days that I don’t even think about the food I’m missing, and days that are so hard. Lately, honestly, it’s been hard. I miss some basics like eggs, nuts, nut butter and chocolate. I’m hopeful to add these back in and keep telling myself the reason behind this diet – to find any triggers to autoimmune disease. It will be worth it all in the long run…I hope…

pan-fried cod, sauteed kale, 1/2 sweet potato with coconut oil and cinnamon
