If you are on a grain-free diet and looking for an easy recipe for moist grain free bread, you are in for a treat! This bread recipe is suitable for GAPS, SCD, and Paleo diets and is also dairy free. It’s also super easy to make and freezes well.

I hope this picture speaks for itself. It’s grain free BREAD! I SAID… “IT’S GRAIN FREE BREAD!!” (hooray!) Did you even know such a thing existed? I didn’t – until a few months ago. After much trial and error and my little taste testers’ honesty, this is the recipe that passed with flying colors.

This recipe has become a popular GAPS diet bread, but it’s perfect for anyone needing a good grain-free bread recipe.

Baking Grain Free Bread Loves in Batches

The recipe comes together easily and I usually take a day every month-and-a-half or so to make 8 loaves. The recipe doubles easily, so I typically make 4 double batches. Recently I was able to triple the recipe in my Kitchen Aid mixer and even baked three loaves in one oven with the pans evenly spaced.

To freeze, store it as directed below and place bags in freezer. It’s THAT easy!

Paleo Sandwich Bread

When you are on a paleo diet it can be disheartening trying to find a paleo bread recipe that tastes great. Trust me, I have tried many. Gluten-free flours can be tricky, so the first few times I tried coming up with a good recipe, they were more cardboard-like breads than a traditional bread loaf.

I didn’t give up though, and my daughter said it was the best gluten-free bread she has tasted! It has the perfect texture and the best thing about this grain free bread is that it made for a good sandwich. She loves slathering it with homemade sun butter.

What Goes in Grain Free Bread?

Some common grain-free bread recipes contain ingredients such as: coconut flour, tapioca flour, almond flour, psyllium husk powder, ground flax meal, flax seeds, cassava flour, tapioca starch, arrowroot flour.

I experimented with my ingredients list using some of these starches and flours, but I just wasn’t getting the results I was looking for. Good things often don’t happen the first time around when it comes to creating paleo recpies for bread.

But I think I scored on this one, I hope you try it and will agree! The ingredients are simple and this is a quick bread you can make in under an hour from start to finish.

My grain free bread recipe is free of gluten, grains, dairy, refined sugar, soy, starches, and xanthan gum. There is little prep-time, how awesome is that?

Paleo Baking

Baking with paleo ingredients is much different than when you use wheat flour. Baking with nut flours and various starches requires different measurements of wet ingredients and dry ingredients. Some flours, like coconut flour is really absorbant, so you often have to mix two paleo flours to achieve the perfect texture.

This recipe only uses one flour (almond flour)!

  • almond nut butter
  • butternut squash
  • apple cider vinegar
  • raw honey
  • olive oil
  • finely ground almond meal (almond flour)
  • sea salt

It is likely that you have all that on hand already, except perhaps the butternut squash. So, ready to get out your loaf pan and get baking?

How to Make Grain Free Bread

  1. First you will beat the eggs until frothy in the bowl of an electric mixer using the whisk attachment. (A handheld mixer will also work.)
  2. Next you will add almond butter, butternut squash, apple cider vinegar, honey and olive oil. Beat well.
  3. Then, in a separate bowl, whisk together almond flour, salt and baking soda. Add to wet ingredients and mix until incorporated.
  4. Finally, pour batter into your loaf pan lined with parchment paper. Tap pan on counter to burst any bubbles.
  5. Bake the bread for 35-40 minutes or until toothpick inserted in center comes out clean.

How to Serve & Store

Allow bread to cool for 10 minutes in the pan. Run a knife around short edges of pan and lift bread out by gripping parchment.

Once loaf has completely cooled, slice and store in the fridge wrapped in a paper towel and placed in a zip-top bag or airtight container.

I like to eat this bread warm with some grass-fed butter and raw wildflower honey on it, but it lends itself well as a sandwich bread too. It toasts beautifully in a toaster oven and works great as a side for gluten free casseroles.

It is also great with my herbed goat cheese spread and topped with roast beef.

Store-Bought Paleo Breads and Mixes

If you are looking for a grain-free bread that you can buy at the store, you have a few options.

I like to use Base Culture for quick sandwiches. I find it in the freezer section of my local Publix as well as at Whole Foods. The coral-colored package is the one I have tried and stick to.

Yez! Artisan Keto Bread – I haven’t tried this yet, but the ingredients look great: Almond Flour, Organic Coconut Flour, Organic Whole Husk Psyllium, Organic Chia Seeds, Yeast, Himalayan Pink Sea Salt, Organic Stevia Powder, Distilled Water. (Note, that this does have yeast, which can be problmeatic for some).

Simple Mills Artisan Bread Mix – Simple Mills is a go-to for me when I am looking for something easy and quick. My favorite way to make this bread mix is to do it as dinner rolls. I have found that they stick to paper liners though, so be sure to just grease your muffin pan instead.

UNBUN Keto Sliced Bread – Un Bun makes bread and buns. I use the bundsmore than the bread though. For packaged bread, I prefer Base Culture.

Why is there apple cider vinegar in your bread recipe?

The apple cider vinegar is used to help the bread rise. It reacts with the baking soda and causes the rising of the loaf. don’t worry – you won’t taste it!
