Chicken Burgers with Grilled Peaches and Honey Mustard Sauce (Paleo, GAPS, SCD, grain-free)
  • 2 lbs. ground chicken (I use Shelton's)
  • 2 tablespoons coconut aminos
  • 1 tablespoon gluten-free mustard (omit for strict AIP)
  • ½ teaspoon salt
  • ¼ teaspoon pepper (omit for strict AIP)
  • ½ cup finely chopped cilantro
  • ¼ teaspoon granulated garlic
  • ½ teaspoon granulated onion
  • 4-6 ripe peaches (nectarines also work well)
  1. Preheat gas or charcoal grill.
  2. In a large bowl, mix all ingredients together (except peaches) with a large fork. (Do not use hands or it will make the meat tough.)
  3. Brush peach halves and burgers with olive oil and place on the grill.
  4. Grill burgers according to your grill's instructions until juices run clear.
  5. Grill peaches until softened but not mushy.
  6. Serve with honey mustard sauce, if desired.
