This dinner has become a family favorite. It’s so easy to prepare (love that) and is simple but delicious. You’ll be seeing it frequently in my line-up over the next few weeks.
My new favorite thing to do is make a huge batch of AIP-legal pesto and keep it stored in a glass jar with a lid in the fridge. To keep the pesto fresh, I just pour some olive oil on top of the pesto to keep the air from oxygenating the basil. Not sure exactly how long it will keep like this, but I use it up within the week. I’ve added this to my original post called “Tips to Staying in the Game“.
