Here’s my big whoppin’ menu plan for day three of AIP. Still feeling melancholy. Trying to remind myself I have so much to be thankful for. God is good and will give the strength and grace to carry on.
I was craving a family recipe my mom used to make when I was a kid. Had it for lunch and an afternoon snack today. I realize that canned tuna isn’t the healthiest option – but if it earns me any health points, I did use the Wild Planet brand which I believe to be the safest on the market. Sometimes, you just gotta live dangerously…
Here goes –
a few handfuls of mixed greens sauteed with leeks – threw in some leftover Cilantro Lemon Chicken and topped with avocado
Cauliflower Fried “Rice” (MADE WITHOUT egg, vinegar, mushrooms or pepper – I ADDED carrots, leeks, leftover chicken)
blueberries and blackberries (Super-Doc says I can have limited fruit at this point. It must be low glycemic. He’s allowing two servings a day, but said one had to be mixed berries.)
