Well everyone – I’ve made it a full week. I only have seven more weeks to go before Super-Doc will discuss allowing me off this STINKIN’ AIP DIET…ur, um…oh dear…I mean this well-researched AIP Diet that’s going to make me the healthiest person alive. “Hooray!” for health.
Here’s my rundown of food…I feel quite vulnerable letting the whole world, well, I guess it’s probably more like 12 of my closest friends and family…know what I’m eating every day. Scout’s honor – I’m telling the truth! I’ve not cheated once! BUT I’M DYING FOR A SCONE AND A CUPPA OOLONG TEA…
I have good news…I’ve lost three pounds. I can’t say it makes up for the loss of my beloved casein, but I will take it.
Breakfast:
shredded beets and carrots; leftover chicken burger; leftover Brussels sprouts
Lunch:
leftover cubed steak, leftover spaghetti squash; shredded beets and carrots with e.v.o.o. and salt
Snack:
3 pieces of Whole Foods Naked Roast Beef, few calamata olives, Brussels sprouts
Dinner:
pan-fried cod seasoned with salt and garlic powder and dredged in coconut flour; big salad with cucumber, carrots, beets, e.v.o.o. and gluten free balsamic; sweet potato with Artisana raw coconut butter and cinnamon
