Today was an off day for me. Woke up not feeling very well. It was my hubby’s birthday and I wanted to make him a really nice dinner. His usual request is fried chicken cutlets (coated in seasoned breadcrumbs and Pecorino Romano cheese), mashed potatoes and salad. This year, because he’s so sweet (or scared – I’m s-c-a-r-y when I’m denied food) he said he didn’t want anything that I couldn’t also have on my diet. I know he loves Carnitas, so I thought I’d make them sans the nightshade and seed-based spices (i.e. the good stuff).
I got it all prepared for the crock pot last night and turned it on. The next morning my husband says, “We have a problem – there’s this little thing in the back of the crock pot called a plug.”
RUT ROH. Two Boston Butts down the toilet. (I always make a double to freeze for another meal.)
So, I high-tailed it to Whole Foods, got another roast and baked it in the oven. It turned out great and took less time to cook. I also made some guacamole to go with the carnitas. I usually season my guac with a few spoonfuls of salsa (nightshade heaven but a no-go for AIP), cumin, lime juice, red onion, cilantro and garlic powder. I hesitantly made the guac without the no-no ingredients but increased the lime juice and cilantro. Surprisingly, it was really good. Or, I’m just hungry and desperate…

salad topped with Carnitas (made WITHOUT smoked paprika, black pepper and cumin) and guacamole (made WITHOUT cumin or tomato)
I ate blueberries and blackberries with Aroy-D coconut cream that I mixed with a few drops of stevia and cinnamon while my family had Luscious Lemon Torte (I’m not bitter)
