Today has been a little crazy. I’ve had no intentions of eating out during this AIP (autoimmune protocol if you’re new here) – simply because I didn’t think any restaurant could (or would) accommodate the many restrictions. And who could blame them? However, a dear friend and I went shopping this afternoon and found ourselves in need of more time (summer clothes shopping for kidlings) and dinner was fast approaching.
With a Cheesecake Factory nearby, I thought maybe a salad could be pulled off. Much to my surprise it could – and was pretty good too. First off, I told the server that I had gluten and casein allergies. Then, I sheepishly explained my “food allergy diet” and ordered a salad with a long list of “withouts” (without pepper, without dressing, without edamame, without beautifully cubed delicious hard cheddar cheese (sigh), and without tomatoes) and with chicken seasoned only with salt and grilled (no butter and no gluten). I asked for e.v.o.o and lemon wedges to dress the salad with. The server was very sweet about it all and I ate every last speck of that salad.
Please note I had a hefty snack when I got home, because I was hungry about an hour after that beautiful salad…oh well…
