Ok – here we go for day four of “What it’s like to be hungry and grumpy.” I’m just kidding…kinda-sorta. Today is the day that Super-Doc told me my lab results were in regarding allergens tested against wheat and casein. He began the email with “Don’t shoot the messenger!” I knew it was over.
Wheat allergy confirmed. (I can live with that at this point.) Casein allergy confirmed (INHALE…EXHALE).
Casein? CASEIN?!?! I whined and cried ALL DAY. I called my husband CRYING. True story – because food love runs deep in my little Italian veins. “I’m losing my Italian heritage!” I said to my husband on the phone. “I’ll NEVER eat a decent meatball again! GREAT meatballs have Pecorino Romano in them and that has CASEIN.”
Apparently, in the lives of many with casein intolerances or allergies, sheep’s milk cheese (like Pecorino) or even casein-free ghee can still be tolerated. HOWEVER, Super-Doc broke it all down into “forms of casein” for me. He said that casein actually contains other proteins that can cause an allergic reaction. And, some people are even allergic to the protein found in the milk fat called “butyrophilin” which would rule out even ghee for me. Since we don’t really know which protein molecule of casein I’m reactive to, Super-Doc said “Bottom line: no cheese for you.”
I’m changing his nickname from Super-Doc to food Nazi. Told you I was grumpy. Oh! If that wasn’t enough, he emailed me with a suggestion for a new blog name. Ready for this? “I Can Only Eat Dirt and Drink Water”.
Super-Doc has a sense a-yoomah. Great.
Here’s my menu breakdown for the day. Everything would have tasted better with a light dusting of Pecorino.
All I can say is THIS: I had BETTER be a size two by the end of it all…
spinach and leeks sauteed in coconut oil with salt and a tiny bit of sweet potato. I know I had protein of some kind but I can’t remember BECAUSE I CAN’T HAVE CASEIN SO WHAT’S THE POINT?
Spinach salad with leftover chicken, shredded carrot and avocado. Dressed with extra virgin olive oil and fresh lemon juice.
Leftover Cauliflower Fried “Rice” (MADE WITHOUT egg, vinegar, mushrooms or pepper – I ADDED carrots, leeks, leftover chicken) (WHILE MY FAMILY ATE GRAIN FREE PANCAKES AND BACON)
